Makes: 4 - 6 Servings
  • 1 large eggplant, chopped
  • 2-3 Tbsp (30 à 45 ml) Baba Ghanoush Seasoning
  • 3 firm, ripe tomatoes, cut into wedges
  • 1 Tbsp (15 ml) lemon juice
  • 2 Tbsp (30 ml) olive oil
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste

Preparation


 
  • Combine first three ingredients in an (p.1004212). Cover and microwave on high for 10 minutes.
  • Mix in lemon juice and olive oil. Season to taste.

Tip: Serve as a side dish with roast or grilled meat, or spoon over steamed rice or warm pasta.
