Ingredients


Makes: 4 servings
  • 1 Tbsp (15 ml) unsalted butter or oil
  • 1 C (250 ml) each diced carrots, celery, onions, and red pepper
  • 2 medium potatoes, peeled and diced
  • 1/4 C (60 ml) all-purpose or gluten-free flour
  • 4 C (1 L) 2% milk
  • 1 lb (450 g) white fish, cut into chunks
  • 2 Tbsp (30 ml)
  • 1 Tbsp (15 ml) 3 Onion Dip Mix

Preparation


 
  • In a large pot, melt butter over medium heat and sauté vegetables and potatoes for 5 minutes, until soft.
  • Stir in flour and cook 1 minute.
  • Slowly whisk in milk. Bring to a slow boil, whisking constantly until the soup has slightly thickened.
  • Add fish and dip mixes. Simmer for 5 minutes, until fish and potatoes are fully cooked.
